I have a very small bathroom and thought I'd use a simple 300x600 white tile for the walls..tiler suggested a matt finish for a modern look. High gloss can suit some applications but as you suspect Its not a design preference in current times.

They are matte with just a bit of texture. 
Which one is least visible? What I might regret deeply though with this tile is when it comes time to cleaning.

Definitely use matte finish on the floors, and I would also use matte for the walls as well for consistency. This is especially true for smaller sized bathrooms. Matt finish tiles can also suit a traditional look and industrial stylings in a main floor application. would love to know how it turned out?
